Thai-Seasoned Fish In Coconut Milk

Ingredients

500g firm white fish, cut into cubes
2 tablespoons Thai seasoning (you’ll find this in the spice section of the supermarket)
2 tablespoons crushed garlic
1 tablespoon canola oil
½ bunch silverbeet, stems trimmed,
leaves washed and roughly chopped.
400ml coconut milk
2 green shallots, trimmed and chopped
1 tablespoon fi sh sauce
basmati rice to serve

Place the fish, Thai seasoning and garlic
in a bowl. Leave for 10 minutes.
In the meantime put the rice on to cook.
Heat the oil in a saucepan. When hot
add the fish pieces, tossing to seal on all
sides. Add the silverbeet and coconut milk and
bring to the boil. Add green shallots and fish sauce.
Serve immediately with rice.
